Acetylation with Acetic Anhydride ($$\text{Ac}_2\text{O} / \text{Pyridine}$$)

Rarely Tested

$$\text{HOCH}_2(\text{CHOH})_4\text{CHO} + 5(\text{CH}_3\text{CO})_2\text{O} \xrightarrow{\text{Pyridine}} \text{CH}_3\text{COOCH}_2(\text{CHOCOCH}_3)_4\text{CHO} + 5\text{CH}_3\text{COOH}$$

$$\text{Glucose} + 5\text{Ac}_2\text{O} \to \text{Glucose Pentaacetate} + 5\text{AcOH}$$

Concept: Glucose reacts with five molecules of acetic anhydride ($$\text{Ac}_2\text{O}$$) in the presence of pyridine as a base to acetylate all available alcoholic hydroxyl groups ($$\text{--OH}$$). Each hydroxyl group undergoes ucleophilic acyl substitution, replacing the hydroxyl hydrogen with an acetyl group ($$\text{--COCH}_3$$) to form glucose pentaacetate.
